Coconut Chocolate Chip Cookies

Coconut Chocolate chip cookies
We use three forms of coconut in these chocolate chip cookies, which makes them super moist. They’re packed with delicious flavor and super easy to make!

1 ¼ cups flour
½ teaspoon sea salt
½ teaspoon baking soda
1 ¾ cup shredded coconut, unsweetened
½ cup Coconut Earth Balance (or butter of choice) softened to room temperature
1 ½ cup coconut sugar (or sugar of choice)
1 egg
1 teaspoon vanilla
1 teaspoon coconut extract
1 teaspoon vanilla
½ cup chocolate chips

Preheat oven to 350 degrees.
In mixer on medium high, whip butter, sugar and egg until light and airy, about 10 minutes. Add extracts and continue to whip another minute.
Whisk together dry ingredients in a bowl, except for coconut.
Add flour mixture to mixer and slowly mix in. Add coconut and combine.
Add chocolate chips and mix.
Scoop out dough on greased cookie sheets using teaspoon scoop, space 2 inches apart.
Bake for 9 minutes or until browned on outside.
Let cool, and try not to eat them all!
Total cooking time: 25 minutes

Yield: 24 cookies
